Rice Krispies Treats

These Rice Krispies treats are such an easy no bake treat that kids always enjoy. As a mom of four kids who love sharing treats, I have easily made hundreds of batches. They are a hit every time and people always rave about them. The only tweak I made to the original recipe is adding two extra tablespoons of unsalted butter but I have found it makes them so much more moist and delicious. I also have learned a few tricks along the way that help make them turn out perfect every time. Hope you enjoy this recipe that is great to make with your kids to enjoy and share!

Ingredients:

  • 6 cups Rice Krispies cereal
  • 5 Tbsp of unsalted butter
  • 10 oz package of mini marshmallows
  • Wilton icing gel (if you would like the treats to be colored)
  • You will also need a large pot, wooden spoon or chopsticks to stir, and either parchment paper or a rice paddle (this is probably the Asian in me).

Directions:

  • Measure 6 cups of Rice Krispies cereal and pour into a bowl.
  • Get a cookie sheet pan ready by either lining it with parchment paper or buttering it.
  • Melt 5 Tbsp of unsalted butter in a large pot over low heat on the stovetop.
  • When the butter is mostly melted, add a 10 oz package of mini marshmallows and stir with a wooden spoon or chopsticks until there are no more lumps. Sometimes we use larger marshmallows too because it is what we have but the mini marshmallows are best as they will melt quicker and more evenly.
  • Add icing gel coloring at this time if desired and mix.
  • Turn off the heat and quickly pour your bowl of Rice Krispies cereal into the pot.
  • Use a wooden spoon or chopsticks to stir to evenly mix.
  • Once mixed, pour everything out onto your cookie pan.
  • Use parchment paper or a rice paddle to quickly press to form one even layer covering the whole pan.
  • Wait fifteen minutes then cut into squares or use a cookie cutter to cut out desired shapes. If you don’t wait the full fifteen minutes, the cookie cutters will get too sticky and the shapes also don’t come out as defined.

As Valentine’s Day is just around the corner, we opted to use our heart shaped cutters. However, you can easily switch out the cutters to coordinate with any holiday or party theme.

Here is my youngest helping me to mix. She understands not to touch the pot which is hot and to stir gently so she doesn’t get splashed. She is only five but is already quite a pro in the kitchen. This is really an easy recipe that kids can help to make and share. I hope you’ll give this recipe a try with your kids!
