Peach Yogurt Popsicles
We are fortunate to live close to some local farms and recently had the opportunity to take the kids peach picking. They were so ripe and sweet, that of course we had to taste test a little and couldn’t just bring home a few. With some record hot weather surrounding us, they were destined to turn into cool treats. These homemade popsicles are both healthy and delicious, perfect to make with your kids to enjoy the last bits of summer.
Ingredients:
- 8 cups of peeled, pitted, and roughly chopped peaches
- 32 oz plain whole milk yogurt
- 1/2 to 1 cup granulated sugar (depending on how sweet your peaches are and how sweet you like your popsicles)
- 3/4 cup heavy cream (adds a wonderful richness and more calories for my skinny kids)
Directions:
- Put everything in your food processor or blender, pulse a few times, and then puree. My kids like a few chunks of peaches so we don’t puree it all the way. You can also add sliced peaches to your molds then pour in your puree.
- Fill your popsicle molds or ice cube trays.
I just poured everything from our food processor into a plastic mixing bowl and gave my kids soup spoons to fill their popsicle molds. Because this recipe makes quite a bit, we ended up running out of popsicle molds and filling our ice trays.
- Insert popsicle sticks. You can either freeze your popsicles for about 30 minutes then insert your sticks or cover the ice cube trays with aluminum foil, make small slits on top with a sharp knife, and insert your sticks.
- Freeze overnight or for 4-6 hours. This part was hard for my kids so we made this an evening activity and enjoyed some of our peach yogurt puree as smoothies.
The ice trays worked just as well and created mini-pops perfect for little hands. Cooking with kids can get a little messy but it provides wonderful learning opportunities and creates great memories. I hope you’ll give this recipe a try with your kids!
